Barbara J Mathison, CHC, is a Certified Food For Life Instructor with PCRM.org. She is president of Nutritious Way “Teaching Whole Food Plant-Based Diet & Lifestyle.” The 3rd Wednesday of each month is her Demo & Dinner with Barbara & Duane – the Dynamic Duo doing a food demonstration of 8 to 12 recipes and best of all participants receive a full dinner (reservations required). She is president of The Vegetarian Society of Utah. Barbara is a graduate of T Colin Campbell Foundation Plant-Based Nutrition, a Certified Health Coach by The Wellness Coaching Institute, a Certified Touch For Health Instructor, a Tai Chi Dragon Qigong Instructor, and a student of TrueNorth Health Center. At age 63 Barbara turned “Cold NON-Turkey” on May 7, 2007 – vegan (whole food plant-based – WFPB). Within 4 months of not eating any animal products including all dairy and no oil she became healthy: no longer obese (weighing up to 229 pounds most of her adult life); no more medications for high blood pressure, high cholesterol, constipation, depression and severe pain from Rheumatoid Arthritis and Fibromyalgia and no more cancer. Her eyesight returned after 2 years of eating WFPB which resulted from a TIA (mini stroke in 2005) which blinded her left eye. Barbara in her 72nd year of life is a healthy, happy wife, mother of 4, grandmother of 9 and great grandmother of 5 with 2 more on the way! She now dedicates her life to the Nutritious Way and spreading the word about the incredible benefits of changing to the whole food plant-based lifestyle.
